Ten randomized samples of materials were collected from two
places (Damascus, Homs)in Syria for isolation and identification
yeasts. These yeasts were classified morphologically according to
Barnett's and physiologically by API technique .Results
showed
that 6 isolated yeasts were Saccharomyces cerevisiae . These
isolated yeasts were screened to investigate production of biomass.
The results showed that there were differences in the ability of
isolated yeasts to produce biomass. Saccharomyces cerevisiae
isolated from date fruit was best yeast for biomass production.
This research was conducted at the Department of Food Science,

from company of Natural Aljabal Juice from AL-suidaa

orate and prarerd two concentarate (15% and 35%) by using
distilled –sterlization water according to pirson .
The study investigated the survival ability of probiotic Lactobacillus
casei in apple juice to produce functional juice ,as well as,
optimizing the growth conditions of L.casei in apple juice including
concentration, temperature ,inoculum size usi
ng Response Surface
Methodology as statistical method.
Twenty kg of apple juice concentrate (70%) were tooked from company
of Natural Aljabal Juice from AL-suidaa Governorate and prarerd two
concentarate (15 and 35%) by using distilled –sterlization water . these
samples stoered at (4-20-30-40)ºc for
3 months, chemical and microbial
tests were assayed in the every month average triple to every concentrate
and all different temperatures and recored the average, The chemical
analysis results show: The acidity relaise in all samples that storage at 20
ºc beacause it is agreeable for oraganisms to grow.
The research was conducted in order to investigate the metal
contaminants (lead Pb،cadmium Cd ، arsenic As), which moves
from irrigation water to many types of vegetables which irrigated
from it,and compared the extent of pollution by irrigation source
(treatment sewage، wells water), and by vegetable type
(Vegetables, fruit plants, tuberous), and by the irrigation method
used (surface irrigation ، modern irrigation).
The research was conducted with the aim of investigating in the
most important pathogens (coliform_ E.coli_ Salmonella), which
moves from irrigation water to many types of vegetables which
irrigated from it. And compared the extent of contaminatio
n by
irrigation source (treatment sewage, wells), and according to the
type of vegetable (fruit plants, tuberous vegetables), and the
irrigation method(surface irrigation, modern irrigation).
Total of 33 isolates of lactic acid bacteria from different
samples (Dairy products, Pickles), were isolated and identified
according to the common characteristics of lactic acid bacteria.
Twinty-five isolates were rods and 9 were cocci.
