Ten medicinal plants were chosen from various plants in Syria which used as spices or cooked and Syria traditional medicine. Their names Rosemary, Damask rose, Chamomile, Sumac, Silver linden, Black cumin, Thyme, Mint, Laurel and lemon balm. Moisture, yield of extraction, total phenolic content (TPC) and antioxidant activities of methanol, ethanol, acetone and aqueous extracts of medicinal plants were investigated. The TPC were measured by Folin-Ciocalteu method, and the antioxidant activity was assessed by the scavenging activity towards 2, 2′-diphenyl- 1-picryl hydrazyl (DPPH)-radical.

In this research, the antioxidant capacity(DPPH method), and total phenolic content (assayed by Folin-Ciocalteu method), ,flavonoids, anthocyanins (pH differential method) and ascorbic acids(2,6-dichlorophenol indophenol) in three fruit tissues ( peel, pulp and whole fruit), of four apple cultivars commonly in Syria(Red Delicious, Rome Beauty, Starking Delicious, Golden Delicious), were studied.
Classified locality Yeasts have been culturing in plantology department at the Faculty of Science-University of Damascus, from genera of Pichia, Candida, Geotrichum, Rhodotorula, Phaffia on solid Czhapek agar medium, and after incubated in appropr iate conditions their colonies showed evidence of different colors to produce a variety of pigments. Then it cultured in liquid Czhapek medium to increase biomass and the genera producing endocellular pigment separated from the medium by filtration with added ethanol on them and blasting cells by ultrasonic waves to get a pigment, while the genera producing exocellular pigment is separated about the liquid medium also by filtration but the solvent was added to the medium containing the pigment.
The medicinal and aromatic plants (thyme Khalili) is one of important economic crops were introduced to the Syrian Agriculture recently "as one of the most important alternative crops, especially" in the coastal region, The goal of research is to c larify the economic importance of agriculture thyme Khalili in the coastal region, This study was conducted on all farmers who were counted on the ground in Tartous and Latakia Governorates, there were 213 farmers ,with planted area reached to 565 acres in 2015.The indicatives of economical feasibility based on data and statements gathered from site of research and relying, were used in the economical evaluation .The study showed that the totally achieved profit per annum from one acre of (thyme khalili) amounted to 151451.81 Syrian Pounds , and profitability coefficient in proportion to the productivity cost has amounted to 283.64%, also the time indicator of capital recovery for (Thyme Khalili) has amounted to 2.82 years.
The aim of this study was to determine the phenolic content in the fruit, leaf and root samples of the fennel plant and in the fruit samples from several different areas, and then to determine the antioxidant capacity of these samples.
The antioxidant activity of pomegranate juices extracted by two methods was determined using three methods: β- carotene, Linoleic acid emulsion, and DiPhenel Picryl Hydrazyl (DPPH). The juice was extracted by separation arils from fruits and squee zed using Cyclone machine (T-1), while the second extraction method included squeezing the whole halve fruit with previous machine, (T-2). The potential compounds were determined using ethanol in a comparison with Butylated hydroxyl Anisole (BHA) as reference antioxidant. There were significant differences (P<0.05) in the antioxidant activity between the treatments in all measuring methods. The means of antioxidant activity amounted to 82.66% in T-1, 86.82% in T-2 and 86.98% in BHA. There was significant relationship between total phenols and antioxidant activity in all treatments.
