A total of 294 samples of raw-unpasteurized bovine milk and variety of dairy products (hard cheese, sweet cheese, cream cheese and cream), were collected from local markets in Lattakia city as well as 44 samples of used water (clear potable water collected before used in cheese preparing processes) and preserving water (turbid water collected from hard cheese preserving tanks). All samples were analyzed for E.coli O157: H7 detection.

Three hundreds and thirty samples of raw milk and some of the Syrian dairy products collected during 2002-2003 from different areas of Syria, and were used to detect the presecne of Listeria in these products. Results indicated that mainly L. mono cytogenes and to a lesser degree L.innocua and L.ivanovii were found in these products. The perecentage of violating of the Syrian standards was 4 % in raw milk, 0.0% in pasteurized milk, 2% in white cheese, 0.5% in shinglish and 0.0% in ice cream. And it has been deterhmined the identity of the isolated bacterial species of Listeria from the above-mentioned products, where L. monocytogenes was dominant, and to a lesser estent were L. innocua and L. ivanovii.
The study is based on the cost of milk and marketing margins in dairy farms in Jordan and estimated cost function. This study is based on a cross section data from 33 dairy farms. In the study it was determined that the cost of raw milk production in dairy farms is 0.43 JD/ Kg. and the most important cost factors are feed cost, depreciation contributing 64%, 19%, respectively of total production cost. It was found that marketing margins of milk were 77%, econometric estimation of raw milk function using different forms showed that the linear model is superior to the other forms. The elasticity of the estimated cost function is found to be 0.20.
This research was conducted in the laboratories of Faculty of Agriculture – Damascus University Department of Food Sciences. The aim of this research was to study the inhibition effect of the growth and activity of Lactic acid bacteria as starter in yoghourt, on the growth of E. coli O157:H7 bacteria. A pure strains of E. coli O157:H7 and Lactic acid bacteria was used for this study. The effect of Lactic acid bacteria (Streptococcus thermophilus and Lactobacillus bulgaricus ) in the number of E. coli O157:H7 was studied in 37 ◦C and 4◦C. The Lactic acid bacteria was inoculeted in milk which was prepared to manufacture the yoghurt. The number of E. coli O157:H7 was gradually decreased with the time. The decline number of this bacteria was clear when S. thermophilus and Lb. bulgaricus were used as a mixture starter , then when Lb. bulgaricus was used as a single starter then S. thermophilus was used a single, In the other hand, the inhibition effect was weaker at 37 C and stronger on 4 C.
In this study, the concentration of Pb and Cd was determined in some agricultural products in order to compare this concentration and to know the capacity of these products to accumulate these two elements. The samples were digested by nitric acid and the elements were determined by the atomic absorption spectroscopy. The results showed that the concentration of lead and cadmium in protected products was less than the concentration in unprotected products, and the concentration of lead was more than the cadmium, these results can be explained by the extensive use of lead and the unprotected agriculture products were exposed to the air pollution more than the protected products.
