Benzoic acid is extensively used in the preservation of food products for maintaining quality and extending shelf life by inhibiting mould and bacteria growth. Some previous studies have demonstrated that consumption of excessive amounts of benzoic acid could be a health hazard. The aim of this study was to detect the presence of benzoic acid and its salts in some commercial children food like potatochips that labeled "Free of Preservatives" . Twenty seven samples of potatochips purchased from three different local products were analyzed for the presence of benzoic acid. The results revealed the presence of benzoic acid in nine samples and its concentration was between 100.34-188.65mg/kg. We have concluded also that TLC is a very convenient method for the detection of benzoic acid in food products .

Nisin peptide is one of the natural food preservative, is not toxic and produced by Lactococcus lactic during food fermentation. It has a high potency against gram-positive bacteria and spores, while its efficiency of Nisin against gram-negative b acteria and fungi is low , currently Nisin is used as food preservative in many countries around the world for cheese products and others.
The aim of this study was to control the content of some commercial products containing amino acid (Arginine) available in the local market in addition to other products containing creatine and protein. Three methods were used for quantitative determ ination of amino acids Kjeldahl method depending on the total content of nitrogen, assay by the visible radiation using Spectrophotometer after ninhydrin derivatization and high performance liquid chromatography with pre-column O-phtadelaldehyde derivatization using fluorescence detector. There were no significant differences in the results obtained by the three used methods. The results revealed that dietary supplements containing creatine and protein were conform to the European pharmacopoeia specifications, regarding products containing arginine used as medication and locally manufactured, they were conform to pharmacopoeia specifications while the illegal dietary supplement containing arginine were not conform.
The free iodine (I2) in povidone-iodine (PVP-I) solutions is responsible for its bactericidal activity, the bactericidal effect is steadily increased with the free iodine concentration. This study aims to compare some of povidone-iodine solutions c ommon at the local market with one solution produced by Mundipharma company (Betadine®) which used as a reference. Commercial samples (PVP-I 10%) were obtained from three local companies (A, B, C), with one batch from each company. The research included controlling free iodine concentration, pH and evaluation of bactericidal activity by using disc diffusion method and rapidity of the bactericidal activity on both Staphylococcus aureus and Escherichia coli. The local samples solutions showed low pH values compared with Betadine®, furthermore, all the solutions extracted by heptane showed high levels of free iodine with a preference for one local company. The high level of free iodine was accompanied with an increase of inhibition diameter and rapidity of bactericidal effect.
This study is carried out to determine phytic acid in some local vegetables and fruits, before and after ripening (apples, peaches, pean, tomato), green and dried legumes (beans, chickpea, lentil, peas, soybean, maize ….), and oil seeds (peanut, sesa mi, ……) and cereals and their products (grain, barley, oats, rice, bread kinds, bran, borghol) that are consumed in Latakia city. Most of the products contain high levels of phytic acid, especially in green products and their derivatives; the values range between (0.1-3.57 %) and (0-1.95 %) on dry bases respectively.
