The objective of this investigation was the Identification of Salmonella spp. isolated from white cheese (traditional processed from sheep milk) and classify it by using API 20E and PCR techniques. 80 samples of white cheese (traditional processed from sheep milk) were collected from different locations in Syria. According to PCR technique, 17 samples gave positive result for salmonella meaning that 21.25 % did not match the levels of the Syrian Standardization and Metrology (S.S.M.). According to API 20E technique, the dominat type of Salmonella was Salmonella Arizona (47%), followed by Salmonella typhim (23.61 %), Salmonella paratyphi (17.6 %) and Salmonella spp. (11.76 %). Results showed that samples from local cheese positive for Salmonella were much more than samples from Akkawi cheese. The results showed that the PCR technique is fast and accurate and can be used to Identify Salmonella in cheese.
This study were conducted on 450 samples of raw chicken meat ( 150 samples of thighs- 150 samples of breasts -150 samples of wings ) were collected from retail marketin Hama city,to detect contamination of staphylococcus.

This research was conducted at the Faculty of Agriculture, Department of Food Science laboratories to isolate lactic acid bacteria from some Syrian milk products (milk, yogurt, cheese) and determine some morphological, physiological characteristic and the ability of these isolates to ferment sugars.
Bacteriological critical control points (CCPS) for automatic ice cream industry were identified based on the primary ingradients of such industry, processing stages and working environment. Three thousand samples were analyzed during two productio n seasons. There were four critical control points in the company in which the study was conducted, Pasteurization (mix) stage, cold (tanks) stage, freezing stage, and hardning (tunnel) stage. The end-product did not coincide with the Syrian standard because of these critical control point, which contributed by 15%, 25%, 35% and 25% respectively, meanwhile the remaining pointes, such as the used water, choclate, air and workers were not critical control points under the production conditions of the investigated company.
