Terebinth trees have been occupying a good part of the mount of Syrian (abed elaziz, pelass). The Pistacia atlantica fruit, rich in oil, is used by local inhabitants in many ways, few studies investigation of the P. atlantica fruit oil of Syria has been carried out,This study investigates the protein, ash, crude oil and oil composition of P. atlantica with respect to total phenol, iodine value and saponification value, in order to classify it among the other known edible oils thenafter compare the oil composition with the oils of other Pistacia species. The fruit of P.atlantica appears to be rich in oil. The major fatty acid in the sample studied are oleic, linoleic, our results show that. The oil has a higher content of unsaturated FA (oleic + linoleic = 72%). The oil can be classified as an oleo-linoleic vegetable oil. The biochemical data showed an elevated MUFA content (50-48%) which may constitute an important property against certain pathologies for its nutritional and preventive virtues.

Essential oils from peels of 6 citrus species were extracted. The species were lemon (Citrus limon), orange (C. sinensis), grapefruit (C. paradisi), pomelo (C. maxima), mandarin (C. reticulata) and bitter lemon (C. aurantium) using hydro-distillat ion (Clevenger type). In general Gram-positive bacteria were more sensitive to the oil extracts tested than Gram-negative bacteria, and P. aeruginosa was the most sensitive within the Gram-negative group.
This research was conducted in Agriculture College (Food Science Dep., Damascus U university). The purpose of this research was to evaluate Cherkes Cheese by determination some Chemical and microbial properties for 40 samples collected randomly fr om different places Damascus and country sides. The results showed very deferent changes in Chemical properties. The acidity ranged between (0.25 - 0.54%), moisture content (38 - 56%), and total dry matter (44 - 62.7%). Results also showed that all samples were rejected by (Syrian Normal Standard)for fat content in dry matter (20 -33%). Fifty percent of samples were rejected for their content of sodium chloride which was (1.2 - 4.3%). Results also showed that samples were free of Salmonella and there was no rejection for existence of Staph. aureus but 37.5 % and 10% of samples were rejected by (Syrian Normal Standard)as per content of coliform and E.coli, respectively.
The effect of clay soil treatment with two levels of tobacco west compost and organic fertilizer (15 and 30 ton/ h), in addition to mineral fertilizer treatment, with three replicates of each treatment on some physical properties (Aggregate size di stribution, main weight diameter, bulk density and porosity) and chemical properties (Organic carbon, humic and volvic acid and humification index for big and small soil aggregates was studied. The results showed that tobacco west compost and organic fertilizer were effective in increment of soil content of organic carbon, which reached (20 and 26%) for organic fertilizer, and (39 and 45%) for compost compared to the control, conducing to ameliorate soil physical properties, where The main weight diameter, stable aggregate rate and soil porosity were increased. Whereas, bulk density decreased significantly in both treatments compared to the control. Compost treatment affect soil physical properties more than organic fertilizer.Mineral fertilizer decreased soil content of organic carbon compared to the control. Humic and volvic acids contents were between 2.12 and 74.3 mg/kg aggregates in the control,and compost treatments alternatively in macro aggregates (> 2mm). Wile, volvic acid values were between 0.93 mg/kg in control for small aggregates (< 0.25), and 3.17 mg/kg aggregates in mineral fertilizer treatment for (0.25 – 2) aggregates. Humification index values were less than 2 in macro aggregates, while it was bigger than 2 in small aggregates.
This study was carried out during 2015to determine some chemical Composition of the fruit of some distribution phenotypes of Prunus ursina in different regions of Westrens of Syria. six natural distribution sites were determined(Duerbsndiana-Alnab een-Alshohtte- Helata-Btmazah-Wadeheleen), and 35 trees were determined as samples. Fruits were harvested and following parameters were determined: dry matter, total acids (T.A), total soluble solids (T.S.S), and total sugar. Statistical analysis of investigated phenotypes showed that There were differences between dry matter, total soluble solids (T.S.S), and total sugar between two groups. the trees were distributed in two groups (A, B) .The results showed existence of most trees in whole sits, while (J6 and KA6) were distributed in two different sits(Btmazah and Duerbsndiana) .
The study was excuted in Latakia governorate during the period (2014-2015). In this study, it has been used three cultivars of Eriobotrya japonica which were Seedawi, Morocan and Municipal). Onfigurable characterization, the average fruit weight ca lculation and the average number of seeds have been done of the fruit. Some chemical analysis were also conducted of the juice. The data has been statistical analyzed and the results showed that the earliest cultivar in maturity was Municipal. The highest rate of average fruit s weight was (53.40g) in Morocan cultivar. And the fruits shapes were between the oval shape in the Morocan and Seedawi cultivar, and circular shape in the Municipal cultivar. The Morocan and Seedawi cultivars have the supremacy in production quantity(34.67-34 kg/tree) respectively at the Municipal. The highest proportion was in vitamin C, the acidity and sugars were (0.977,1.073,15.20 %) respectively in municipal cultivar.
