Four model caramelisation products (CPs) have been prepared by heating different Saccharides solutions (glucose, fructose, lactose and xylose) at 100°C for 3 hours at different pH( 2.5, 4, 7 and 10). Both Browning and intermediate thermal degradat ion products {the caramelisation products} were studied using ultraviolet /visible spectrophotometer. Generally, the results showed that CPs increased with increasing heating time, and the formation rate depends upon the type of Saccharides and pH value. The reducing power of the four distinct CPs was defined, also. Among all the Saccharides tested, fructose CPs exhibited the highest reducing power values in alkaline solutions. Finally, the concentration changes of Saccharides during heating were quantitatively defined by using high performance liquid chromatography HPLC.
Quinaldine includes shifting hydrogenes which might be involved in important reactions as the condensation and Mannich reactions. Quinophtalone has been prepared through the reaction of quinaldine with phtalyic anhydride in the presence of alumini um chloride anhydrous Imines derivatives have been prepared through the reaction of Quinophtalone with hydroxideamine and phenyl hydrazine and then diazotion anyhydride has been done to the resulting compounds. The main properties(yield of juice, total soluble solid, pH, total acidity, total sugars), some antioxisant compounds as (vitamin C, carotenoids, total phenol, anthocyanins), and antioxidant activity measured by DPPH method for some main Syrian or ange cultivars (navel, valancia, blood orange, and shamouti) were investigated. The results showed that valancia was the highest in juice yield (55.16%), while navel had the highest content of carotenoids(8.68mg/100g) and the lowest one of vitamin C(31.53mg/100g). Whereas, blood orange was superior in its content of total phenolic (295.73 mg gallic acid100/g) and antioxidant activity, (74.833%) among the studied cultivars.
This research was conducted at the Faculty of Agriculture, Department of Food Science laboratories to isolate lactic acid bacteria from some Syrian milk products (milk, yogurt, cheese) and determine some morphological, physiological characteristic and the ability of these isolates to ferment sugars.
